Ingredients for the ratatouille

  • Courgette
  • Onion
  • Homemade tomato sauce
  • Red pepper
  • Green pepper

Ingredients for the salad:

  • Oak leaf lettuce
  • Batavia lettuce
  • Lamb’s lettuce
  • Fresh tomato diced
  • Cooked potato diced
  • Olive oil
  • Salt
  • Modena vinegar
  • Cod fillets

Preparation of the ratatouille: slowly fry the onion, the red and green peppers. Add the courgette. Once the vegetables are cooked, add the home-made tomato sauce and leave to one side.

Preparation of the salad: mix one part of Modena vinegar to three parts olive oil for the vinaigrette.  Toss together the different varieties of lettuce. Cook the cod in boiling water for 8 minutes.

Assembly: place the ratatouille on the bottom of the plate in a round mould, then part of the lettuce mix, followed by the diced potato and tomato, then another layer of lettuce and the warm cod cut in slices. Remove the mould, season and add the vinaigrette. Decorate around the edge of the plate with grated carrots and beetroot.
