Ingredients: eggs, flour and sugar.

Preparation: first, mix the egg yolks with the sugar.   Having beaten the egg whites, mix with the other ingredients and place the mixture on a baking tray. Bake at 200 ºC for about 10 minutes.

These rellenos are prepared daily.

Ingredients: egg whites, flour, sugar, almonds.

Preparation: first whisk the egg whites and add the sugar. Then add the flour and mix well.  Finally, using a piping bag, pipe onto a baking tray and place the almonds on top. Cook for 2 hours at 120-130 ºC.

Anecdote: a foreign visitor threw them away thinking they were dry.

Ingredients: sugar, water, egg whites, a little lemon juice.

Preparation: mix the sugar, egg whites and lemon juice until glazed. Separately mix the sugar with the water in a pan and boil at low heat (132-135 ºC) until stiff.

At this point add one spoonful of the glazed mixture. A reaction happens and it will start to rise. Then, with the help of a wooden spoon, stir to make it sink back down into the pan and, when it starts rising again, pour into a mould and allow to cool for 3-4 minutes.

This traditional dish is beginning to disappear.
